Ingredients
- 1 pound sm. California Pea beans
- 1/2 teaspoon baking soda
- Water to cover beans
- 1/2 pound salt pork, washed and cubed
- 1 lg. onion, diced
- 1/3 c. dark molasses
- 1/2 c. dark brown sugar
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1/4 teaspoon paprika
- 1/4 teaspoon grnd cloves
- 1/4 teaspoon black pepper
- 1/2 teaspoon chili pwdr
Directions
- Blanch beans for 10 min in boiling water. Wash beans and sort. Soak overnight in cool water. In morning, rinse. Add in water. Bring to a boil for 20 min. Remove from burner, add in soda. Let stand for 1 minute. Drain. Rinse again in cool water. Put pork and onion in bottom of bean pot. Combine the molasses, brown sugar, salt, mustard, paprika, pepper and chili pwdr in a c. of warm water. Add in to bean pot. Add in beans. Cover with warm water. Bake 4-6 hrs. Add in warm water, if necessary. Uncover last hour to brown. Beans should be tender, not mushy.
