Borage Fritters (Frittelle Di Borragine) Recipe

Ingredients

  • 2 x Large eggs
  • 1/2 c. flour
  • 2 tsp baking pwdr
  • 1 c. cool water
  • 1/4 c. grated Parmigiano-Reggiano Salt to taste Freshly-grnd black pepper to taste
  • 1 bn borage cut into strips
  • 1 lt extra-virgin extra virgin olive oil for frying

Directions

  1. In a medium-sized bowl, combine the Large eggs, flour, baking pwdr, water, cheese and a healthy pinch each of salt and pepper and whisk well to combine. Cover and rest for at least 2 hrs.
  2. In a tall-sided, heavy-bottomed pot, heat the extra virgin olive oil to 350 degrees. Stir the borage into the batter. Drop by tablespoonfuls into the warm oil and fry till golden.
  3. Remove from the oil with a slotted spoon and set on a plate lined with paper towels, to drain. Sprinkle with salt and serve immediately.
  4. This recipe yields 4 servings.
