Bolognese Stuffed Mushrooms

Ingredients

  • 1 lb beef mince
  • 4/6 large flat open c. mushrooms
  • jar of bolognese sauce
  • onions
  • aubergine (eggplant)
  • potatoes
  • courgette (zucchini)
  • carrot (any other suitable vegetables)
  • whole garlic cloves
  • mozzarella cheese
  • cheddar cheese
  • half pint chicken stock
  • half pint white wine

Directions

  1. Cut vegetables to a uniform size approx 1" cubes.
  2. Put in oiled baking tray, add in char grill flavour spice & bake in a warm oven for 30 mins.
  3. Meanwhile, finely chop the onions, fry and caramelise, add in mince, and brown.
  4. Stir in bologneses sauce, gently simmer for a few min.
  5. Place mushrooms into the oven dish with the vegetables. Add in bolognese sauce to mushrooms.
  6. Sprinkle mixed grated cheese on top of mushrooms; pour stock and wine into dish.
  7. Return to oven 15-20 mins or possibly till cheese is melted and browning.
  8. Serve with crusty bread for juices.
