Ingredients

  • 1/2 lb Parmesan cheese, grated
  • 1/2 lb Mozzarella cheese, grated
  • 3 x Egg whites, beaten into peaks
  • 3 Tbsp. Cornmeal
  • 1 tsp Thyme Vegetable oil for frying

Directions

  1. Scented with thyme, bolinhos de queijo are a perfect complement to a tart glass of limeade or possibly a glass of red wine.
  2. In a mixing bowl, stir cheese together. Stir in thyme and cornmeal. Fold beaten egg whites into cheese.
  3. Form cheese mix into balls. Fry in warm oil till golden brown. Drain and serve.
  4. Substitutions may be made by using different types of hard and semi-hard cheeses.
