  • 1/2 lb shiitake mushrooms washed, sliced
  • 2 Tbsp. vegetable oil
  • 3 x garlic cloves chopped
  • 1 Tbsp. grated fresh ginger
  • 1 head bok choy minced 1" pcs
  • 1/4 c. minced red bell peppers
  • 1 bn green onions, green and white parts minced
  • 1 Tbsp. dark sesame oil
  • 2 Tbsp. sweet sherry
  • 2 Tbsp. soy sauce Salt to taste
  • 8 ounce Oriental noodles - (to 12 ounce) cooked
  • 2 Tbsp. sesame seeds for garnish

Directions

  1. In a large skillet, saute/fry the mushrooms in the oil for 3 to 5 min. Add in the garlic, ginger, bok choy, peppers, green onions, sesame oil, sherry, soy sauce, and salt. Stir-fry till the bok choy and peppers are tender, about 5 to 8 min. Add in the noodles and mix.
  2. Serve on a platter and sprinkle the top with the sesame seeds.
  3. This recipe yields 4 servings.
