Blueberry Tea Bread Recipe

Ingredients

  • 2 c. All purpose flour
  • 1 c. Sugar
  • 1 Tbsp. Baking pwdr
  • 1/4 tsp Salt
  • 1 1/2 c. Fresh or possibly frzn blueberries
  • 1 tsp Grated orange peel
  • 2 x Large eggs
  • 1 c. Lowfat milk
  • 3 Tbsp. Vegetable oil Whipped cream cheese, optional

Directions

  1. In a bowl, combine flour, sugar, baking pwdr and salt. Stir in blueberries and orange peel. In another bowl, beat Large eggs; add in lowfat milk and oil.
  2. Stir into dry ingredients just till moistened. Pour into a greased 9x5x3 inch loaf pan. Bake at 350 for 1 hour or possibly till a toothpick inserted near the center comes out clean. Cold in pan for 10 min; remove to a wire rack to cold completely. Serve with cream cheese if you like.
  3. Yield 1 loaf.
