Ingredients
- 2 T cold, unsalted butter, diced
- 2 T AP flour
- 2 T white whole wheat flour
- 1/3 cup packed light brown sugar
- 2 t Ceylon cinnamon
- pinch of salt
- 1 cup (4 oz) pecans, chopped
- For the cake:
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 large eggs
- 1 t vanilla
- 1 cup AP flour
- 1 cup white whole wheat flour
- 1 t baking powder
- 1 t baking soda
- 1/4 t fine sea salt
- 1 cup buttermilk (Pappas says you can also use low fat yogurt)
- 2 cups fresh or frozen blueberries (I recommend only using fresh in season), do not thaw if frozen

,%20it%20was%20hard%20to%20blame%20her.%20%20John%20started%20talking%20about%20English%20muffins%20and%20bagels,%20at%20which%20point%20I%20declared%20I%E2%80%99d%20rather%20have%20a%20homemade%20whole%20grain%20cake%20with%20fruit%20than%20commercial%20bagels%20and%20English%20muffins%20(not%20because%20they%20are%20bad,%20but%20rather%20because%20they%20are%20certainly%20not%20any%20healthier%20in%20which%20case%20I%20can%20get%20a%20lot%20more%20excited%20about%20a%20streusel%20topped%20homemade%20cake).%20%20And%20into%20the%20kitchen%20I%20went.%3C/p%3E%3Cp%3EI%20had%20been%20staring%20at%20this%20cake%20in%20Lou%20Seibert%20Pappas%E2%80%99s%20Coffee%20Cakes:%20Simple,%20Sweet%20and%20Savory%20for%20quite%20some%20time;%20remembering%20that%20it%20was%20made%20with%20whole%20wheat%20flour%20it%20seemed%20like%20a%20great%20place%20to%20start%E2%80%93and%20the%20search%20ended%20there%20as%20well.%20%20I%20made%20a%20few%20adjustments,%20white%20whole%20wheat%20flour%20for%20regular%20whole%20wheat,%20pecans%20for%20walnuts,%20basically%20just%20changing%20things%20around%20to%20our%20personal%20taste.%20%20The%20cake%20was%20a%20huge%20hit;%20I%20borrowed%20a%20trick%20from%20my%20mother%E2%80%99s%20book%20and%20had%20the%20girls%20eat%20a%20spoonful%20of%20peanut%20butter%20(for%20protein)%20before%20heading%20to%20school.%20%20We%20were%20all%20sad%20when%20it%20was%20gone,%20especially%20because%20we%20are%20almost%20out%20of%20local%20blueberries%20since%20we%20were%20not%20home%20last%20summer%20to%20freeze%20any.%3C/p%3E%3Cp%3EBlueberry%20Streusel%20Coffee%20Cake%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Lou%20Seibert%20Pappas%3C/p%3E%3Cp%3EFor%20the%20streusel:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20%20Spray%20a%209-inch%20springform%20pan%20with%20an%20oil/flour%20combo,%20such%20as%20Baker%E2%80%99s%20Joy.%20%20Set%20aside.%3C/p%3E%3Cp%3EFirst%20make%20the%20streusel:%20whisk%20together%20the%20flours,%20sugar,%20salt%20and%20cinnamon.%20%20Using%20your%20hands,%20rub%20the%20butter%20into%20the%20flour%20mixture.%20%20Add%20the%20pecans%20and%20continue%20to%20mix%20with%20your%20hands%20until%20it%20is%20a%20crumbly%20mixture,%20the%20butter%20pieces%20no%20larger%20than%20the%20size%20of%20a%20pea.%20%20Set%20aside.%3C/p%3E%3Cp%3EFor%20the%20cake,%20begin%20by%20whisking%20together%20the%20flours,%20baking%20soda,%20baking%20powder%20and%20salt.%20%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20whisk%20or%20hand%20mixer,%20mix%20together%20the%20oil,%20sugars,%20eggs%20and%20vanilla%20until%20smooth.%20%20Add%20the%20flour%20mixture%20and%20the%20buttermilk%20in%203%20and%202%20alternating%20increments,%20respectively,%20beginning%20and%20ending%20with%20the%20flour%20mixture.%20%20Beat%20until%20smooth.%3C/p%3E%3Cp%3EPour%20the%20cake%20batter%20into%20the%20prepared%20pan.%20%20Scatter%20the%20blueberries%20over%20the%20batter%20(adding%20them%20this%20way%20will%20prevent%20the%20berries%20from%20sinking%20too%20much).%20%20Sprinkle%20the%20streusel%20topping%20over%20the%20top%20of%20the%20batter.%3C/p%3E%3Cp%3EBake%20for%2035-40%20minutes,%20until%20the%20cake%20is%20golden%20brown,%20the%20cake%20pulls%20away%20from%20the%20edge%20of%20the%20pan,%20and%20a%20cake%20tester%20inserted%20into%20the%20center%20of%20the%20cake%20comes%20out%20clean%20or%20with%20just%20a%20few%20crumbs%20attached.%20%20Let%20the%20cake%20cool%20for%2010%20minutes,%20then%20remove%20the%20sides%20of%20the%20pan.%20%20Let%20cool%20completely.%3C/p%3E){kind=link}
