Ingredients

  • Quick blueberry jam (recipe follows)
  • 1 1/2 pints fresh blueberries, rinsed
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 tbsp fresh lemon juice
  • 1/3 cup plus 4 tablespoons melted unsalted butter
  • 6 eggs
  • 2 cups milk
  • 2 cups flour
  • 1 teaspoon salt

Directions

  1. Combine the blueberries and vanilla, sugar in a large heavy saucepan. Add 1 cup water and the lemon juice and bring to a boil over high heat, stirring occasionally. Reduce the heat and simmer for 15 minutes, or until the mixture begins to thicken.
  2. Preheat the oven to 375 degrees F. Grease each cup of the popover tin with a teaspoon of the butter. In a mixing bowl, whisk the eggs until frothy. Whisk in the milk and remaining butter. In a mixing bowl, combine the flour and salt together. Whisk the egg mixture into the flour mixture and mix well. Pour the batter into 10 of the prepared popover tins. Bake the popovers for about 50 minutes, undisturbed. Remove from the oven and serve hot with jam
