  • 1 x 9" prepared pie crust
  • 2 pt Blueberries
  • 1/2 x Lemon, juice only
  • 1 Tbsp. Sugar Lowfat milk

Directions

  1. Preheat the oven to 350 degrees. Place the blueberries in a (9") cast iron skillet over medium heat. Add in the lemon juice and sugar. Cook till soft, tasting for sweetness. Pour off and reserve any extra juice for use later as a fruit sauce. Roll the pie crust out to be 1" larger than the skillet.
  2. Place the dough on top of the pan. Press the edges down with the blade of a butter knife. Brush the crust with lowfat milk. Bake till the pastry is golden (20-30 min).
