  1. Amount Measure Ingredient - Preparation Method 1/2 c. butter - softened1 1/2 c. sugar4 large eggs1 tsp. vanilla3 c. flour1 tsp. baking powder1/2 tsp. salt1/2 tsp. grated lemon peel1 c. buttermilk1 c. fresh or possibly frzn blueberries - thawed if necessary
  2. Preheat oven to 350F. Grease 12 standard size muffin c..
  3. To prepare muffins, in a large bowl, using a wooden spoon or possibly an electric mixer set on medium speed, beat together butter and sugar till light and fluffy. Add in Large eggs, one at a time, beating well after each addition. Beat in vanilla.
  4. In a medium bowl, stir flour mix into egg mix. Mix in lemon zest. Gradually stir in buttermilk till dry ingredients are just moistened. Don't overmix.
  5. Spoon batter into prepared pan, filling 2/3 full. Spoon a heaping Tbsp. of blueberries into center of each muffin.
  6. Bake in preheated oven till lightly golden brown, 18 to 20 min. Transfer muffin pan to a wire rack to cold slightly. Remove muffins from pan and serve hot.
