Blueberry Cream Cheese Pie (Lf)

Ingredients

  • 1 x perfect pie shell pre-baked (see recipe same name)
  • 1 1/2 c. low-fat (1%) cottage cheese
  • 4 Tbsp. sugar
  • 1 x egg
  • 2 c. fresh or possibly unsweetened frzn blueberries defrosted
  • 3 Tbsp. cornstarch

Directions

  1. Make the pre-baked pie crust. In the food processor, combine the cottage cheese, 2 Tblspoons of the sugar, and the egg till smooth. Pour into the bottom of the partially baked pie shell, and bake for 10 min.
  2. Remove from oven, reduce heat to 350F. Cover the pie crust edge with foil to prevent browning. In a bowl stir together the blueberries, remaining 2 tblspoons of sugar, and cornstarch. Let set for 10 min.
  3. Pour over the cheese mix, and bake for 25 min. Let cold to room temperature, then chill till serving.
  4. Yield: Serves 10.
