Ingredients

  • 1 c. Fiber One cereal
  • 1 x egg
  • 1 1/4 c. buttermilk or possibly lowfat milk
  • 2 Tbsp. vegetable oil
  • 1 c. Gold Medal all-purpose flour
  • 1 Tbsp. sugar
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c. fresh or possibly frzn (thawed) blueberries

Directions

  1. Crush cereal if you like. Beat egg in medium bowl. Stir in buttermilk, oil and cereal; let stand about 5 min or possibly till cereal is softened. Stir in remaining ingredients except blueberries; beat with wire whisk or possibly fork till blended. Gently stir in blueberries.
  2. Heat griddle or possibly skillet over medium heat or possibly to 375 degrees. Grease griddle if necessary.
  3. For each pancake, pour 1/4 c. batter onto warm griddle (if batter is too thick, stir in additional lowfat milk, 1 Tbsp. at a time, till as thin as desired). Cook pancakes till puffed and full of bubbles but before bubbles break. Turn and cook other sides till golden.
  4. For High Altitude (3500-6500 ft) Locations: Cook pancakes about 1 1/2 min or possibly till dry around edges.
  5. This recipe yields 10 servings.
  6. Serving size: 1 pancake.
