Ingredients
- Salad
- 4 cups shredded red or green cabbage or a
- combination of both
- 1 large carrott, shredded
- 1 stalk celery, thinly sliced
- 1 Granny apple , cored with skin on,
- shredded
- 8 radishes, shredded
- 1/2 cup thinly sliced scallions
- 3 tablespoons minced fresh parsley
- Salt & Pepper
- Dressing
- 4 ounces blue cheese, crumbled, plus some for
- garnish
- 1/2 cup mayonnaise
- 1/3 cup buttermilk
- 1 1/2 tablespoons cider vinegar
- 4 tablespoons sugar
Directions
- Combine all ingredients in a food processor until almost smooth. Transfer dressing to a large bowl.
- Add all vegetables to bowl with the dressing and toss well to combine. Garnish with additional blue cheese.
