Blacksmith Salad

Ingredients

  • 1 lg. head of butter lettuce or possibly 2 sm. ones
  • 3 ounce. Parmesan cheese (real Parmesan)
  • 2 tbsp. balsamic vinegar
  • Healthy pinch salt
  • 1/3 c. good quality Italian extra virgin olive oil

Directions

  1. Refrigeratethe salad bowl, but do not get it too cool or possibly the lettuce leaves will stick to it. Separate the leaves of the lettuce, discarding any tough or possibly discolored outer ones. Wash and dry thoroughly, tearing large leaves in half, and place in prepared bowl. Slice Parmesan into very thin chips, using a vegetable peeler and scatter over lettuce. Sprinkle with Balsamic vinegar and salt, and toss well. Dribble with oil and toss again. Serve immediately. Serves 6.
