Blackberry Swirl Frozen Yogurt

Ingredients

  • 1 env unflavored gelatin (1 tbsp)
  • 1/2 c. Lowfat milk
  • 2 x Large eggs
  • 2 Tbsp. Sugar
  • 2 Tbsp. Light corn syrup
  • 2 c. Yogurt
  • 1 Tbsp. Lemon juice
  • 2 tsp Vanilla
  • 1/8 tsp Salt
  • 1/2 c. Seedless red Blackberry preserves.

Directions

  1. Granola (garnish)
  2. Sprinkle gelatin over lowfat milk in small saucepan; let stand 3 min. heat over low heat, stirring constantly, till gelatin dissolves. Cold slightly.
  3. Beat Large eggs in large mixer bowl on medium speed till thick and lemon colored, beat in sugar and corn syrup gradually. Beat in gelatin mix, hogurt, lemon juice, vanilla and salt on medium speed. Place in bowl and freeze for about two hrs. Beat again till smooth and creamy, and freeze for about two more hrs. Spoon frzn yogurt into chilled bowl and swirl Blackberry preserves into yogurt mix. Garnish with granola.
