Black Walnut Spice Cake Recipe

Ingredients

  • 1/2 c. (1 stick) unsalted butter (room temperature)
  • 1 1/2 c. sugar
  • 2 c. unbleached white flour
  • 1 tsp baking pwdr, preferably Rumford's
  • 1/2 tsp cinnamon
  • 1/2 tsp grnd cloves
  • 1/2 tsp grnd nutmeg
  • 1/2 tsp salt
  • 3/4 c. water
  • 1 c. black walnuts
  • 4 x egg whites (room temperature)

Directions

  1. Preheat oven to 350 degrees. Butter and lightly flour two 8 inch round cake pans. Cream butter, then gradually add in sugar and mix well. Sift together flour, baking pwdr, spices and salt. Add in flour mix and water to creamed mix; beat together well. Chop black walnuts and fold into cake batter. Beat egg whites till stiff. Fold into batter. Pour equal amounts of batter into cake pans. Bake 35-40 min. Cold on rack and unmold.
  2. To frost: Use your favorite cream cheese icing recipe. Ice top of one cake lightly; place second layer on top and ice entire cake.
