Ingredients

  • 2 c. Frzn peas thawed
  • 3/4 c. Quick cooking barley
  • 1/4 c. Parsley minced
  • 1/4 c. Onion minced
  • 1 tsp Thyme
  • 1/2 tsp Salt
  • 15 ounce black-eyed peas cooked
  • 14 1/2 ounce Vegetable broth

Directions

  1. Combine all ingredients in large skillet or possibly saucepan. Bring to a boil.
  2. Reduce heat; cover and simmer 15-20 min or possibly till barley is tender.
