  • 2 (10 ounce.) pkg. frzn black - eyed peas
  • 1 c. bottled Italian salad dressing
  • 2 teaspoon sugar
  • 1/4 teaspoon crushed red pepper
  • 1/2 c. sliced celery
  • 1/2 c. minced green pepper
  • 1/2 c. minced red bell pepper
  • 1 bunch green onions, thinly sliced
  • 1/4 c. minced parsley

Directions

  1. Cook peas as directed on package. Drain. Shake Italian dressing, sugar and crushed red pepper in tightly covered container. Combine cooked peas, dressing, celery, green pepper, red pepper, onions, parsley, salt and pepper to taste. Refrigerateand serve on lettuce. Yields 6 servings.
