  • 3 tbsp. vinegar
  • 1 1/2 teaspoon salt
  • 1/3 c. oil
  • 1/8 teaspoon warm pepper sauce
  • 2 cloves garlic, crushed
  • 5 (16 ounce.) cans black-eyed peas rinsed, liquid removed well
  • 1 (16 0z.) can chick peas, rinsed, liquid removed well
  • 1/2 c. minced pimentos
  • 1/2 c. minced green onions
  • Lettuce leaves

Directions

  1. In a large bowl beat vinegar and salt till salt is partially dissolved. Beat in oil, pepper sauce and garlic till well blended. Add in black-eyed peas, chickpeas, pimentos and green onions. Toss to coat. Cover, stirring occasionally, refrigerateseveral hrs. Serve from lettuce lined bowl or possibly platter. Makes about 24 servings.
