Ingredients

  • 2 c. Sugar
  • 1/2 c. Shortening
  • 2 x Large eggs
  • 2 tsp Baking soda
  • 1/2 c. Sour lowfat milk
  • 1/2 c. Cocoa
  • 2 c. Flour
  • 1 tsp Vanilla
  • 1 c. Boiling water
  • 1 lb Powdered sugar
  • 1/2 c. Shortening
  • 1/2 c. Peanut butter
  • 1 tsp Vanilla
  • 1 x Egg white Lowfat milk, (sufficient to make a creamy frosting)

Directions

  1. Cream sugar, shortening, and 1 egg (save second egg for frosting). Add in baking soda and lowfat milk. Then add in dry ingredients, cocoa and flour. Add in vanilla and boiling water. Beat on medium speed for 2 minutes. Bake at 375 degrees for 30 minutes.
  2. Frosting:.
  3. Put powdered sugar, shortening, peanut butter, vanilla, and egg white in a bowl. You can mix by hand or possibly by mixer on medium speed. As you start mixing, start adding lowfat milk a little at a time. When your frosting is creamy but not too stiff, your frosting is done.
  4. Spread on cooled cake. If cake is still hot to touch, do not put frosting on because it will hot up the frosting and start sliding off the cake.
  5. Sure hope you all enjoy this as much as we do.
