Black Beans With Fresh Plums And Bell Peppers

Ingredients

  • 4 med Plums, purple
  • 1 1/2 Tbsp. Butter, unsalted Or possibly
  • 1 1/2 Tbsp. Corn oil
  • 1 lrg Onion, minced
  • 1 lrg Bell pepper, red, seeded and minced
  • 1 lrg Bell pepper, yellow, seeded and minced
  • 2 x Garlic cloves, crushed and chopped
  • 2 x Cloves, whole
  • 2 tsp Cumin, grnd
  • 1/2 c. Cilantro, fresh, chopped
  • 2 tsp Lemon juice, fresh
  • 1 tsp Honey, light (or possibly substitute)
  • 2 c. Beans, black, cooked,liquid removed

Directions

  1. Fill a deep saucepan with water and bring to a boil.
  2. Add in plums and boil for 30 seconds to loosen skin.
  3. Remove with a slotted spoon and set aside to cold.
  4. Heat butter or possibly heat oil in a large skillet. Add in onion, red and yellow gell peppers, garlic, cloves, cumin and cilantro. Saute/fry gently, stirring often, till onion softens, about 5 - 10 min.
  5. Meanwhile, peel plums, remove pits and chop pulp. Add in pulp, lemon juice and honey to onion mix. Add in beans, cover and continue cooking over low heat till peppers are soft, about 30 min, stirring often to prevent stickikng.
  6. Makes 3 to 4 servings.
