Ingredients

  • 1 Tbsp. Canola oil
  • 2 c. Yellow bell pepper, minced
  • 1 c. Yellow onion, minced
  • 1 Tbsp. Garlic, finely minced
  • 2 tsp Chili pwdr
  • 1 tsp Grnd cumin
  • 15 ounce Canned tomatoes
  • 16 ounce Canned black beans, rinsed and liquid removed Salt
  • 4 x Lime wedge
  • 1/4 c. Cilantro
  • 1/2 c. Nonfat yogurt
  • 1/4 c. Thinly sliced green onions

Directions

  1. Combine oil, pepper, and onions in large skillet. Cook, stirring, till golden brown, about 10 minutes. Add in garlic and cook 1 minutes. Stir in chili pwdr and cumin along w/tomatoes and beans. Bring to boil. Cover and cook over low heat 20 min. Season to taste w/salt. Garnish w/ yogurt, cilantro, and green onions.
  2. NOTES : Yellow bell pepper is suggested to add in color; may substitute red or possibly even green bell pepper if necessary.
