Black Bean Soup With Cascabels And Caerphilly

Ingredients

  • 1 lrg Onion
  • 4 x Cloves garlic Little bit of oil
  • 1 lb Black beans (no need to soak) Salt to taste Crumbled Cascabels,fried in a litte oil Crumbled, toasted, dry oregano Crumbled Caerphilly

Directions

  1. Soften 1 large onion and 4 cloves of garlic in a little bit of oil. Add in 1 Ib of black beans (no need to soak). Cover with water, boil rapidly for 10 mins and then simmer gently till just done. Roughly mash beans with a potato masher, adding stock to the desired consistancy. Add in salt to taste. Serve with crumbled cascabels that have been fried in a litte oil, crumbled toasted dry oregano and crumbled Caerphilly.
  2. Serves 5-6people.
