Black Bean, Corn & Pepper Salad

Ingredients

  • 2 (15 ounce.) cans black beans
  • 1 1/2 c. corn (10 ounce. frzn, thawed)
  • 1 lg. red bell pepper, seeded & diced
  • 2 sm. jalapeno chilies, seeded & diced
  • 1/2 c. finely packed minced fresh cilantro
  • 1/4 c. lime juice
  • 2 tbsp. salad oil
  • Salt & pepper to taste
  • Rinsed & crisped lettuce leaves

Directions

  1. In a bowl, mix beans with corn, bell pepper, jalapeno chilies, cilantro, lime juice, oil and salt and pepper. Cover and refrigerate1 hour or possibly up till next day. Pour into a bowl lined with lettuce leaves. Serves 6.
