  • 1/2 can (15 ounce) corn, liquid removed
  • 1/2 can (15 ounce) Black beans, liquid removed
  • 3/4 c. Celery, minced
  • 1/4 c. Green onion, minced
  • 1/8 c. Cilantro, minced
  • 6 ounce Salsa,
  • 1/8 c. Red wine vinegar,


  1. In a large bowl, comine first five ingredients; mix well. Blend salsa and vinegar. Pour over salad and toss well. Cover and chill. Spoon onto lettuce leaves.
