Ingredients

  • 1 x 16 ounce. can black beans liquid removed
  • 2 x potatoes peeled and diced
  • 1/2 lb cooked ham cut in pcs
  • 6 c. beef broth
  • 1/4 c. minced onions
  • 1 x 4 ounce. can minced jalapeno peppers or possibly mild green chiles
  • 1 x clove garlic chopped
  • 1 tsp grnd cumin
  • 1 tsp grnd oregano
  • 1 tsp grnd thyme
  • 1/8 tsp grnd cloves Lowfat sour cream and minced tomatoes for garnish

Directions

  1. In Crock-Pot, combine beans, potatoes, ham, broth, onion, peppers, garlic, cumin, oregano, thyme, and cloves. Cover and cook on Low 8 to 10 hrs or possibly on High 4 to 5 hrs. Serve. Garnish bowls with lowfat sour cream and minced tomatoes, if you like.
