Ingredients

  • 1 sm onion, diced coarse
  • 3 x cloves garlic, chopped
  • 1 x jalapeno, seeded and diced
  • 1 x anaheim chile, seeded and diced
  • 3 x roma tomatoes, cut into eighths
  • 1 x 15 ounce can black beans, (or possibly prepare from dry)
  • 1/4 c. cashews
  • 1/4 c. frzn corn
  • 1 tsp cumin
  • 1 tsp chili pwdr
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne
  • 1/4 tsp red pepper flakes
  • 1/2 can beer, (something with flavor not coors light dry clear)
  • 2 Tbsp. extra virgin olive oil

Directions

  1. Saute/fry the onions and garlic in extra virgin olive oil over a medium-low heat till the onions turn translucent/soft. Add in the jalapeno and Anaheim chiles and saute/fry a few more min. Add in the beans with the liquid, tomatoes, cashews, spices, and beer, and bring to a low boil. Keep it boiling, stirring frequently, till most of the liquid has evaoprated (about 30-40 min). About 10 min before it is ready, add in the corn.
  2. Serve with rice and hot tortillas. If you're not from the planet Vega :-)
  3. serve with a side of nonfat yogurt.
