Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 1 1/4 c. fresh corn kernels or possibly frzn, thawed
  • 1 x 16 ounce. can black beans rinsed and liquid removed
  • 1 x 15 ounce. can white beans rinsed and liquid removed
  • 1 c. minced red bell pepper
  • 3/4 c. minced red onion
  • 2 Tbsp. fresh lime juice
  • 3 lrg clv garlic -- pressed
  • 1 x jalapeno pepper seeded and chopped
  • 1 Tbsp. minced fresh oregano or possibly 1 tsp. dry
  • 1 Tbsp. chili pwdr
  • 1 1/2 tsp grnd cumin
  • 1 x salt and freshly grnd pepper

Directions

  1. Heat 1 Tbsp. oil in heavy large skillet over high heat. Ad corn and saute/fry till brown, about 3 min. Transfer to large bowl. add in 2 Tbsp. oil, beans, bell pepper, onion, lime juice, garlic, jalapeno, oregano, chili pwdr, and cumin. Season generously with salt and pepper.
  2. (Can be made 2 days ahead. Cover and chill. Bring to room temperature before serving.)
