  • 10 x bitter almonds see * Note (or possibly 1 tspn almond extract)
  • 1 c. sweet almonds regular, non-bitter
  • 1 c. butter - (2 sticks) softened
  • 3/4 c. granulated sugar
  • 2 1/2 c. sifted flour
  • 1 c. powdered sugar

Directions

  1. * Note: No stores regularly stock bitter almonds but they can be ordered from Apricot Power (www.apricotpower.com).
  2. Heat the oven to 350 degrees.
  3. Grind the bitter almonds, if using, with the regular almonds in a food processor. Otherwise, just grind the regular almonds.
  4. Cream together the butter and sugar in the bowl of an electric mixer. Add in the almond extract, if using. Mix together the flour and grnd nuts, and slowly add in to the butter mix to create a dough. The dough will be crumbly.
  5. Shape the dough, about a tsp. at a time, into balls and place on an ungreased baking sheet. Lightly flatten the cookies. Bake till lightly browned, 15 to 18 min. Roll the cookies in the powdered sugar while still hot. Repeat till all the dough is used.
  6. This recipe yields 75 cookies.
