Ingredients

  • 3 1/4 c. frzn fava beans, blanched, and, peeled
  • 1/4 c. reserved cooking liquid
  • 1 clv garlic, chopped
  • 1 x lemon, juice only
  • 1/3 c. extra virgin extra virgin olive oil
  • 1/2 tsp grnd cumin, seed, toasted
  • 1/4 c. fresh minced parsley
  • 1/4 tsp salt freshly cracked black pepper

Directions

  1. Blanch and remove skins of fava beans.
  2. Boil the peeled fava beans till tender
  3. Drain the beans and reserve 1/4 c. liquid.
  4. In a food processor, combine half the beans, the reserved liquid, garlic and the lemon juice.
  5. Pulse till the mix is smooth, scraping down the sides, if needed.
  6. Add in the extra virgin olive oil, and remaining beans and pulse till smooth.
  7. Add in spices, salt and pepper and pulse.
  8. Transfer to a serving bowl, add in the parsley and stir.
  9. Serve with hot pita wedges.
  10. Yield: 2 c.
