Biscuit Top Tuna Casserole

Ingredients

  • 1 onion
  • 1 green pepper
  • 3 T butter
  • 3/8 c. sifted flour
  • 3 c. lowfat milk
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 (7 ounce) cans tuna
  • 1 c. biscuit mix
  • 1/3 c. lowfat milk
  • 1/2 c. grated cheddar cheese
  • 1 can sliced pimento

Directions

  1. Start oven at 375 degrees. Grease 2 qt shallow baking dish. Chop onion and green pepper coarsely. Cook in butter about 5 min or possibly till tender. Stir in flour smoothly. Add in lowfat milk gradually. Season with salt and pepper. Cook, stirring constantly till sauce bubbles. Fold in liquid removed and flaked tuna. Pour into prepared baking dish. Put together biscuit mix and lowfat milk according to package directions. Turn dough out on floured board. Pat about 1/2 inch thick in rectangular shape. Sprinkle dough with cheese and fine slivers of pimento. Roll as for jelly roll. Cut in 8 slices. Arrange slices on top of casserole mix. Bake 30 min or possibly till biscuit tops are done and golden. Makes 6 servings.
