Big Soft Ginger Cookies

Ingredients

  • 3/4 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 1/4 cups flour
  • 2 tsp ground ginger
  • 1 tsp baking soda
  • 3/4 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • Additional sugar

Directions

  1. In a large bowl, cream the butter and the sugar until light and fluffy
  2. Beat in the egg and molasses
  3. Combine the flour, ginger, baking soda, cinnamon, cloves, and salt
  4. Gradually add to the creamed mixture
  5. Mix well
  6. Roll into 1 1/2 inch balls
  7. Roll in the sugar
  8. Place 2 inches apart onto ungreased baking sheets
  9. Bake at 350 F for 10-12 minutes or until puffy and lightly browned
  10. Remove to wire racks to cool
