Best of Fall Cookies

Great cookie with everything you love about fall - butterscotch, pecans, oats, pumpkin...soft and good. I just made these yesterday, so its definitely not just a seasonal cookie!

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1 cup butterscotch chips
  • 1 1/2 sticks unsalted butter, softened
  • 1 egg
  • 2/3 cup sugar
  • 2/3 cup brown sugar
  • 1 cup oats
  • 2/3 cup canned pumpkin
  • 1 1/2 cup white chocolate chips
  • 1 cup chopped pecans

Directions

  1. Put flour and soda and butterscotch chips in a food processor and grind till chips are well-integrated.
  2. Cream butter, sugars, and egg.
  3. Add oats and pumpkin.
  4. Mix in flour till no more flour appears.
  5. Fold in chips and walnuts.
  6. Bake at 350 for about 13 minutes for bigger cookies on greased cookie sheet.
  7. Enjoy with others and a glass of milk.
