Berry-Papaya Power Parfaits with Maple-Cinnamon Granola

Protein packed greek yogurt parfait sweetened with honey and lemon, mixed with fresh blueberries and papaya, and finally topped with some homemade maple-cinnamon granola!

Ingredients

  • For the Parfaits
  • 3 containers (5.3 ounces each) plain nonfat Greek yogurt
  • 5 tablespoons honey
  • 1 1/2 teaspoons grated lemon zest, plus 1 tablespoon juice
  • 1 papaya (1 pound), peeled, halved lengthwise, seeds discarded, cut into 1/2-inch cubes
  • 1 package (6 ounces) fresh blueberries
  • 1/2 cup granola
  • For the Maple-Cinnamon Granola
  • 3 1/2 cups old-fashioned rolled oats
  • 1/4 cup chopped pecans
  • 1/4 cup chopped walnuts
  • 1/4 teaspoon coarse salt
  • 1 teaspoon ground cinnamon
  • 5 teaspoons vegetable oil
  • 5 tablespoons pure maple syrup
  • 1/2 teaspoon pure vanilla extract

Directions

  1. For the Parfaits
  2. In a small bowl combine yogurt, 3 tablespoons honey, and zest; set aside.
  3. Add remaining 2 tablespoons honey and lemon juice in a medium bowl, whisk to combine. Add papaya and blueberries and toss gently to coat.
  4. To serve: Spoon half the fruit and juices among six 8-ounce tall glasses. Top with half the yogurt mixture and half the granola. Layer with the remaining fruit, yogurt, and granola.
  5. For the Granola
  6. Preheat oven to 325 degrees. In a large bowl, toss together oats, pecans, almonds, salt, cinnamon, vegetable oil, maple syrup, and vanilla extract.
  7. Spread oat mixture on a rimmed baking sheet. Bake until golden brown, 25 to 30 minutes, rotating sheet halfway through. Let cool completely.
