Berry Cobbler Recipe

Super easy, SUPER yummy cobbler. Got berries? A cup of almonds? You can probably come up with the flour, sugar, butter and cornstarch to be eating warm cobbler in 45 minutes. (It needs to cool a little!)

  • Crumb Crust/Topping:
  • 1 cup almonds
  • 2 cups flour
  • 1/2 cup sugar
  • 3/4 cups chilled butter, cut into small pieces
  • Filling:
  • 1/2 cup sugar
  • 1 1/2 tablespoons cornstarch
  • 2 pints fresh berries (blueberries, raspberries, blackberries..)

Directions

  1. Preheat oven to 450
  2. Prepare Crust:
  3. Roast nuts, cool, grind (not too finely).
  4. In large bowl, mix nuts, flour sugar and cut butter. Use your hands to make crumbly dough.
  5. Evenly press 1/2 of the mixture into the bottom and sides of an 8 or 9 inch tart pan.
  6. In separate bowl, gently mix filling ingredients: sugar, cornstarch and berries.
  7. Spread berry mixture on top of your crust covered pan.
  8. Then sprinkle the remaining half of the crumb crust on top.
  9. Bake for 30 minutes.
