Ingredients

  • 1 c. strawberries divided
  • 1 c. raspberries divided
  • 1 Tbsp. granular sugar substitute plus
  • 1 1/2 tsp granular sugar substitute divided
  • 1 1/4 c. heavy cream
  • 1 Tbsp. vanilla extract
  • 1/4 c. mousse mix

Directions

  1. In a blender, puree 3/4 c. strawberries and 3/4 c. raspberries with 1/2 tsp. sugar substitute. Coarsely chop remaining 1/4 c. strawberries and fold into the puree.
  2. In a large bowl, whisk 1 c. cream, remaining sugar substitute and vanilla till soft peaks form. Whisk in mousse mix; whisk till very stiff. Whisk in remaining 1/4 c. cream.
  3. In a parfait glass, place 1/4 c. of the berry mix. Top with 1/4 c. mousse mix; repeat layers twice. Top with a few reserved raspberries. Repeat procedure to make three more parfaits.
  4. This recipe yields 4 servings.
  5. Variation:o Chocolate mousse: Omit vanilla and add in 1 Tbsp. cocoa pwdr and sugar substitute to taste.
