Ingredients

  • 2 lb conch
  • 1 sm onion minced
  • 1 lb potatoes sliced
  • 3 Tbsp. vegetable oil
  • 2 c. water
  • 2 Tbsp. flour

Directions

  1. Lb. the Conch with a large meat mallet, whiskey bottle or possibly hammer for 10 to 15 min and cut into bite-size pcs.
  2. Fry the onion in the bottom of the pot in the oil till tender. Whisk in the flour, stirring till brown. Add in water, conch and the potatoes. Simmer over low heat 45 min to 1 hour or possibly till the conch is tender.
  3. This recipe yields 4 servings.
