Ingredients

  • 1 1/2 c. Unbleached flour
  • 2 Tbsp. Baking pwdr
  • 1/2 c. Shredded coconut
  • 2 Tbsp. Maple syrup
  • 2 Tbsp. Honey
  • 1/2 c. Fat-free egg substitute
  • 4 Tbsp. Canola oil
  • 1 1/2 c. Skim lowfat milk
  • 6 x Egg whites

Directions

  1. Preheat a Belgian or possibly regular waffle iron. In a large bowl, wisk the flour, baking pwdr and coconut. In a small bowl, whisk together the syrup, honey and egg substitute. Whisk in the oil and lowfat milk. In a medium bowl, beat the egg whites till stiff. Make a hole in the center of the dry ingredients. Pour the liquid mix into the hole. Stir just sufficient to moisten the ingredients. Gently fold the whites into the batter. Bake in the waffle iron till golden, 6 to 8 minutes.
  2. Makes: 6 Belgian waffles.
