Ingredients

  • 1 bn Beets (4-5)
  • 1/4 c. Feta cheese (I like more)
  • 1/2 x A lemon , juice of Extra virgin olive oil Fresh dill - minced

Directions

  1. 1. Cook the beets in boiling water till just tender (not mushy)
  2. 2. Remove skins and cut into small cubes.
  3. 3. Place in a bow, drizzle with extra virgin olive oil
  4. (not too much), lemon juice and dill to taste; toss.
  5. 4. Sprinkle with crumbled feta cheese and serve.
  6. The contrast between the sweet beets and the salty feta is awesome !
