Beet and Green Bean Salad Recipe

One can never go wrong with salad recipes. It's a matter of choosing and mix-matching personal favorite greens, reds, nuts, cheeses and what have you. The other half of the equation is using the right dressing - vinegary, creamy, sweet or healthy like yogurt.

I love green beans and beets so when I crave for a healthy salad, they're on the top of my ingredient list. And did I just say "healthy?" So I chose a healthy yogurt dressing and walnuts for my topping.

Ingredients

  • 2 cups steamed or blanched green beans, sliced diagonally into 1-inch pieces
  • 2 cups roasted red beets, julienned
  • 1 cup garbanzo beans
  • 2 cups fresh baby spinach
  • 1/2 cup carmelized walnuts
  • 1/3 cup feta cheese
  • 1/2 cup yogurt salad dressing
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine and mix beets, green beans and garbanzos.
  2. Add salt and pepper to taste.
  3. Line salad serving bowl with spinach and top with the salad mixture. Add yogurt dressing.Toss.
  4. Top with walnuts and feta cheese.
