Beer Potato Salad

Ingredients

  • 3 lb Potatoes
  • 2 c. Diced celery
  • 1 sm Onion, minced Salt
  • 1 c. Mayonnaise
  • 2 Tbsp. Prepared mustard
  • 1/4 tsp Warm pepper sauce
  • 1/2 c. Beer
  • 2 Tbsp. Minced parsley

Directions

  1. Cook potatoes in skins till tender. When cold, peel and dice. Add in celery and onion and season to taste with salt. Blend mayonnaise with mustard and warm pepper sauce. Gradually stir in beer. Add in parsley. Pour over potato mix. Mix lightly with fork. Chill.
