Ingredients

  • 1 c. flour
  • 1/4 teaspoon pepper
  • 2 tbsp. melted butter
  • 3/4 teaspoon salt
  • 6 ounce. (1/2 can) beer
  • 2 Large eggs, separated

Directions

  1. Combine flour, salt, pepper in bowl. In smaller bowl beat egg yolks till light, add in beer and stir in dry ingredients (stir only till moistened). Stir in butter. Let stand at room temperature, about 1 hour. Beat egg whites till stiff and gently mix in batter. Dust fish with flour then dip into batter. Fry at 375 degrees for about 3 to 6 min, turn only once. Drain on paper towels. Caution: Do not try to fry too many pcs at one time.
