Beefy Broth Wild Rice Soup

I have been making new soup recipes and also freezing them for a later use. This one is also hearty and flavorful-Enjoy!

Ingredients

  • 2 cups low sodium Beef Broth
  • 1/4 cup cold water
  • 2 cups cooked wild rice
  • 1 carrot
  • one stalk celery
  • one bay leaf
  • one clove minced garlic
  • one shallot diced finely
  • one Idaho (large) potato, peeled diced
  • black pepper, to taste

Directions

  1. In a lidded soup pot add broth, water, bay leaf, garlic and shallot and simmer 8 minutes
  2. While the broth is simmering add diced potatoes into a bowl with some salted water, cover and microwave 6-8 minutes to tender them and remove some starch, drain well, add to soup pot, stir gently, add carrots, celery, and cook on low heat 8 minutes, add wild rice to heat up and blend in the soup for 3-4 minutes.
  3. Serve in soup bowls, add homemade croutons or crackers and Enjoy!
