  • 1 1/2 lbs. grnd beef
  • 1 c. cooked rice
  • 1 sm. carrot, pared and grated
  • 5 tbsp. minced parsley
  • 1/8 teaspoon pepper
  • 1 egg
  • 1 sm. onion, minced
  • 1 teaspoon salt
  • 1/2 c. lowfat milk
  • 2 tbsp. bottled steak sauce
  • 1 med. size onion, peeled, sliced and separated into rings
  • 1 tbsp. butter

Directions

  1. Mix grnd beef lightly with egg, rice, minced onion, carrot, 4 Tbsp. of the parsley, salt, pepper and lowfat milk till well blended.
  2. Pat into a bowl shaped loaf in a greased, shallow baking pan; mark top deeply into quarters. Bake at 350 degrees for 45 min. Brush with steak sauce. Bake 15 min longer, or possibly till richly browned.
  3. While loaf bakes, saute/fry onion rings in butter just till soft; sprinkle with remaining 1 Tbsp. parsley; toss lightly to mix.
  4. Spoon onions in a mound on top of loaf. Cut loaf into quarters at marks, then slice.
