Ingredients
- 4 x 4 ounce beef tenderloin medallions
- 1/4 c. Red wine vinegar
- 2 c. Extra virgin olive oil
- 1/4 x Red onion, sliced
- 1 tsp Fresh garlic
- 1 tsp Black pepper
- 1 tsp Kosher salt
Directions
- Stir marinade, add in beef. Let sit for 2 hrs. Cook medallions to desired temperature (rare, medium or possibly well).
- Juilenne vegetables - zucchini, squash, carrots, red onion, red pepper and green pepper.
- Wild rice timbales - 1 1/2 c. of cooked wild rice
