Ingredients

  • 4 to 5 pound beef chuck, arm roast, or possibly rump roast
  • 1 garlic clove
  • Salt and pepper
  • 1 minced carrot
  • 1 celery stick, minced
  • 1 sm. onion, stuck with 3 cloves
  • 1/2 c. dry red wine
  • 3/4 c. dairy lowfat sour cream, mixed with 3 Tbsp. flour

Directions

  1. Rub beef roast with garlic; season with salt and pepper. Place roast in crock pot and add in all other ingredients. Cover and cook on low 10 to 12 hrs. Excellent served with warm buttered noodles.
