Beef, Pepper & Rice Skillet Recipe

  • 1 1/2 pound round steak, cut in thin strips
  • 2 tbsp. veg. oil
  • 1 c. sliced onion
  • 1 green pepper, minced
  • 1 c. Uncle Bens rice
  • 1 can beef broth
  • 1 soup can water
  • 3 tbsp. soy sauce
  • 1 jar (2 ounce.) pimento, liquid removed

Directions

  1. Brown beef in warm oil in 10 inch skillet. Stir in onion, rice, beef broth, water, soy sauce and 1/2 of the pepper. Bring to boil. Reduce heat and simmer till liquid is absorbed and rice is done. About 25 min. Stir in remaining green pepper and pimento and heat through.
