Directions

  1. Trim fat from roast. Cut to fit crockpot. Put meat in, cover with onions, bay leaf. Combine beer, chili sauce, sugar, thyme, salt, pepper, and garlic; pour over meat.
  2. Cover and cook on low for 10-12 hrs or possibly high for 5-6 hrs.
  3. Transfer meat to platter and keep hot. Throw away bay leaf. Skim fat from cooking juices. Measure 2 1/2 c. juices and place in a saucepan. Combine cornstarch and water; add in to saucepan. Cook and stir until thick and bubbly. Cook for 2 minutes. more. Pass with meat.
  4. NOTES : Left over beer can be frzn for the next time.
