Ingredients

  • 2 Tbsp. Vegetable oil
  • 1/2 lb Lean grnd beef
  • 1 c. Minced onions
  • 1 c. Minced peppers, green
  • 1 x Clove garlic, chopped
  • 1 Tbsp. Lemon juice
  • 1 Tbsp. Mustard, prepared
  • 1 tsp Chili pwdr
  • 2 Tbsp. Soy sauce
  • 1 dsh Cayenne pepper
  • 1 c. Tomato sauce
  • 2 c. Black beans, cooked, liquid removed
  • 3 c. Brown rice, cooked

Directions

  1. Heat oil in large skillet over medium heat. Add in beef, onions, green pepper, and garlic and saute/fry till tender, stirring frequently.
  2. In a small bowl combine lemon juice, mustard, chili pwdr, soy sauce, and cayenne with a small amount of tomato sauce and whisk till thoroughly blended. Stir in remaining tomato sauce, then add in to meat mix. Add in beans and cook for 20 min, or possibly till flavors are well blended. Serve spooned over warm rice.
  3. NOTES : This would be good with grnd turkey or possibly turkey kielbasa.
