Beef and Potato Curry Recipe

I used cooked left over beef. If you use fresh beef, just brown the meat first. Should also work OK for lamb or mutton. The amount of meat, potatoes and peas is up to you! When I sauté onions I usually add in about a teaspoonful of cider vinegar and maybe some extra garlic and chilli....

Directions

  1. Sauté the onions and garlic in the butter and olive oil.
  2. Add the turmeric, ground coriander seeds and chilli and cook for about 1 minute. Add half a cup of water, bring to the boil and dry off the moisture.
  3. Add the meat and potatoes and enough water to cover by about 2 inches, the add the tomatoes.
  4. Bring to the boil, cover and then simmer for about an hour until the potatoes are nice and soft and fluffy.
  5. Add peas about 15 minutes before the end of the cooking time.
  6. Add salt (if you must) and pepper to taste. Then sprinkle over the parsley or coriander leaves and serve with a big chunk of bread.
  7. If you freeze it, reheat from frozen gas mark 6 (or equivalent) for about 50-60 minutes until piping hot.
